Gintastic Ice Lollies

After our awesome strawberry picking session I decided to make some treats using the fruits we had left over. I know, it's hard to believe we had some left over, but we ate a fair few whilst there and a whole punnet afterwards, so there was about half a punnet left to work with.

I was looking up recipes online to tamper with such as the classic Strawberry Shortcake and Strawberry Eton Mess, but with this amazing weather we're having, what's better than a cold treat?

I used to make ice lollies as a teenager by mixing my favourite yoghurts and fruit together, so thought I'd try a more adult version for this perfect beer-garden weather.

I found a recipe online from a fab blogger: The Frosted Vegan and these Boozy Strawberry Ice Lollies caught my eye straight away.

As with every recipe I post, I alter it in my own little way to add my own flavours and tastes into the equation. With this one, instead of vodka, I've used gin as it's a personal favourite, and will always end up being consumed when around friends. I also feel gin is more light and summery!

Lets get down to business - to make these scrummy & refreshing ice lollies;

You will need:
2 shots of Gin - I've used Greenalls, pretty average, but still good ol' gin
2 cups of chopped up strawberries - I won't judge if it's shop bought punnets
3 lemons, squeezed and zested
3/4 cup & 2 tsp. of granulated or caster sugar
3 cups of water

Handful of mint

Start by chopping your strawberries and coating in the 2 teaspoons of sugar. Easier to do this in a bowl to make sure they're evenly coated. Then lay them out on a baking sheet and pop in the oven for 15 minutes. I know, baking your strawberries, almost a crime - but TRUST ME on this one.  They smell and taste phenomenal. Can't believe I haven't done it sooner.

Whilst this amazingness is happening in the oven, get to work on those lemons. Grab a grater and grate the zest of all 3 lemons, then squeeze to your hearts content. I've got a little juicer which makes this process so much easier.

Then add to a blender of some variety all of your ingredients; the 2 shots of gin, the zest and juice of the lemons, the water, the rest of the sugar, the mint chopped up as finely as possible, and finally... the beautiful mess created by the oven. Lost a few in my mouth in the process...

Whizz up so that all the main chunks are gone and sieve if necessary.

Get some lolly moulds (my vibrant ones are from Lakeland and cost a cheap £3.20) and fill up each mould. Pop the lid on and freeze for at least 4 hours. Overnight recommended for the best results.

Couldn't resist them and tried them in the evening when the sun had gone down... but still. Lush.

Have you tried any ice cream making recently? If so, let me know what flavour combos you have tried!

Strawberry Fields Forever

Couldn't resist using one my favourite song titles.

I've been wanting to go fruit picking on a farm for over a year now and this weekend I finally got the chance. I was hoping to last year, but it got to October and I'd completely missed the season to pick anything (and ended up in a field with my best friend foraging - so wasn't the end of the world)!

Matthew and I had a look around on Google at some classic Suffolk Strawberry farms and came across Gosling Farm Shop in Trimley St Martin - just 15 minutes down the road from us - and decided to give it a go.

It was exactly what I was hoping for, and more. Not only did they have acres of land dedicated to strawberry polytunnels, they had raspberries and blackcurrants to collect punnets full, the cutest garden centre with some of my favourite plants in, and a friendly café to have a drink or lunch in. I was sold.

We didn't mess around and collected our punnets ready to run around the polytunnels picking our goods. I was surprised at the amount of them Gosling's had. We both had expected to have to hunt around for the strawberries in the greenery, but there was hundreds in each tunnel to choose from. We could have picked a punnet full in seconds!

However, we decided to be a little fussy and find the most perfect strawberries on the whole farm.

Try before you buy right?

We also had a competition who could find the biggest one - I definitely won!

We must have picked the hottest day of the year so far to hide away in a stuffy, sweltering polytunnel for the hour! We both had to escape every 10 minutes to get some air and the breeze that was about. Perfect time to be a geek and admire my strawberries in the sun.

Once we had filled our punnets to the brim, we went to pay and have a look around the rest of the farm shop.

There were so many plants and pots I wanted to buy - all I can say is bring on payday! I'll be bullying the lovely Matthew to take me back in a couple of weeks so I can load up the back of his car with half the shop.

I loved the Lavenders in the matching purple pots and there were so many cute, vintage style pots perfect for my Acer trees that desperately need potting up. The shop also was packed full of local produce such as honey, cider and eggs. It made me realise how  amazing Suffolk can be with all it has to offer.

It was super hot so we grabbed the nearest bench outside the cafe to enjoy some grub.

Their sausage rolls were INSANELY good, and Matt and I shared a Vanilla milkshake which was also so fresh and yum! Couldn't help but dunk a few of our strawberries in too - highly recommend.

I'm currently sat researching some summery strawberry recipes to add these into, so keep an eye on the next post of mine to try yourself!
